The Ultimate Chocolate cupcake recipe. – Baking is something we do quite a lot together in this house, i’m not sure if it’s because our creations are delicious or because the boys eat everything, so we have to make more for others to enjoy! I have tried various cupcake recipes in the past and they never quite worked for me until I came across a recipe and I just knew that recipe was in for the long haul. I have tweaked the recipe a little to suit me, but I hand on heart declare this to be the best chocolate cupcake recipe in the universe, and Elliot says so too.
Ingredients
For the Cakes
6 tbsp Boiling Water 45g Cocoa Powder 3 Free range large eggs 180g Unsalted Butter 170g Caster Sugar 120g Self Raising Flour 1 tbsp Baking Powder
For the Buttercream
65g Unsalted Butter 35g Cocoa Powder 4 tbsp Milk (I used semi skimmed) 255g Icing Sugar And whichever decorations you want to use, we like to add a bit of gold edible shimmer.
Method
Preheat the Oven to gas mark 4 or 160c, get a cupcake tin (or yorkshire pudding tray works just as well) and line with cupcake cases ready for the mix.You will get around 15 from the mix.
Sift the cocoa powder into a mixing bowl then add the boiling water and mix until it forms a paste. Add the rest of the ingredients to the bowl and combine until it is all evenly mixed. Next you can either use two spoons or an ice cream scoop to evenly divide the mix into the cupcake cases. Bake for 10 minutes or until a cocktail stick comes out clean. Leave to cool on a wire rack.
For the Buttercream:
Melt the butter and then pour it into a mixing bowl, sift in the cocoa powder and stir in the icing sugar slowly. Add the milk if the icing is too think until you get a nice spreadable texture.
Decorate. Eat. Enjoy!
