How hot do you like your chilli? I LOVE my food with a good bit of spice and when it comes to chilli I can handle HOT HOT. ( Toby and Elliot do not like Chilli so they have an alternative)
We actually love to cook, and to cook from scratch too. There's nothing wrong with a chilli sauce jar or tin if you don't enjoy cooking as much as we do. Making Chilli from scratch is not as hard as it sounds and if you already have the right spices and herbs in then why not give it a go?
Ingredients
500g Mince - We use Turkey mince but you can use any. Or you could use veggies if you don't eat meat.
2 cloves of fresh Garlic chopped into small pieces
1 large onion, chopped
2 tsp Tomato puree
1 tin of chopped tomatoes
1 tsp of muscovado sugar
1 tsp garlic powder
2 tsp Cocoa powder
Pinch of Salt and pepper
Hot chilli powder (or mild if you prefer) - as much as you can handle. We usually use 3 tsp.
Tin of Kidney beans & Pinto beans
2 tsp Ground Cumin
1 orange bell pepper, chopped
2 tsp Oregano
(We tend to adjust to our taste throughout cooking until it is just right)
Method
In a large frying pan, on a medium heat, fry the garlic and onion until soft. Then add the mince and cook until browned.
Add in the tomato puree and tin of chopped tomatoes.
Once combined you can start to add in the Garlic powder, Orange pepper, the spices and herbs and then the kidney beans.
Sprinkle in the cocoa powder and sugar, stir and then let simmer for 45 - 60 minutes on a low heat. The cocoa powder helps give the chilli a good colour and the sugar helps to counteract the bitterness in the cocoa. You can adjust the ingredients to your taste the above is just a guideline.
