How to make the best spiced Christmas cookies. It is Christmas eve, today we do our traditions which includes baking cookies. Over the years we have tried so many different recipes for cookies and this recipe is one of the boys AND Santa’s favourite! We have tried plain cookies, choc chip, and even fruit ones but this spiced recipe seems to be the favourite, plus it tastes Christmassy too. Ever since I was little we would make cookies on Christmas Eve and I love how we now do it with our boys. The smell of freshly baked cookies running through the house is just divine. We used to leave out Mince Pies for Santa but decided that he would need an extra treat and these cookies were the perfect option.

Ingredients
255g plain flour
1/2 teaspoon bicarbonate of soda
Pinch of teaspoon salt
175g unsalted butter, melted
220g dark brown soft sugar
110g caster sugar
1 tsp vanilla extract
1 egg
1 egg yolk
330g chocolate chips
1 Tbsp Ground Nutmeg
1 Tbsp Ground Cinnamon
Method
Preheat the oven to 170 C / Gas mark 3. Grease baking trays
Sift together the flour, bicarb and salt.
In a medium bowl, bring together the melted butter, brown sugar and caster sugar until well blended. Add in the vanilla, egg and egg yolk until light and fluffy. Mix in the sifted ingredients until just blended. Add in your spices. Stir in the chocolate chips. I use an ice cream scoop to get even blobs of cookie dough onto the prepared baking trays. Do not flatten the dough. Leaving plenty of room so they can spread out.
Bake for 15 to 20 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking trays for a few minutes before transferring to wire racks to cool completely.
