Easy to make Millionaire's Shortbread




When I asked Elliot if he wanted to make Millionaires shortbread with me, he asked if we were millionaires... Love how kids minds work. This recipe is so easy to make and is one of Craig's favourites. In Fact I am pretty sure if he could get away with it he would summon me to the kitchen and make endless supplies of Millionaire's Shortbread.

Preheat the oven to Gas 4 / 180C / 160 fan


Ingredients

For the shortbread

260g plain flour

80g caster sugar

180g soft butter


For the filling

Two tins of condensed milk

350g Milk Chocolate


Method

DO THIS OVERNIGHT

I make my Caramel by placing two tins of condensed milk into tap hot water in my slow cooker for 8 hours on low (I do this overnight) Trust me it works. You can do this in a pan if you don't have a slow cooker on a very low heat on the hob for 2 hours.


Combine the flour, sugar and butter until it resembles breadcrumbs, knead until it forms a dough and then press into a greased proof baking tin (I use a fondant smoother to press it down) and then pop it into the oven for around 30 minutes.


Leave to cool completely and then spread the caramel over. Melt some chocolate and pour over and then pop it into the fridge to set (Around 1 hour). Cut into the size you want. I always use a hot knife to cut through the chocolate otherwise the chocolate shatters.
