Blogtober day 3 ~ The most delicious Cookies to eat this Autumn. My Choc chip spiced recipe to wow y

Everyone loves cookies right? We love to play around with flavours when we are baking. Sometimes by accident if one of the boys has been messing with something they shouldn’t!

Ingredients

  1. 255g plain flour

  2. 1/2 teaspoon bicarbonate of soda

  3. Pinch of teaspoon salt

  4. 175g unsalted butter, melted

  5. 220g dark brown soft sugar

  6. 110g caster sugar

  7. 1 tsp vanilla extract

  8. 1 egg

  9. 1 egg yolk

  10. 330g chocolate chips

  11. 1 Tbsp Ground Nutmeg

  12. 1 Tbsp Ground Cinnamon

Method

  1. Preheat the oven to 170 C / Gas mark 3. Grease baking trays

  2. Sift together the flour, bicarb and salt.

  3. In a medium bowl, bring together the melted butter, brown sugar and caster sugar until well blended. Add in the vanilla, egg and egg yolk until light and fluffy. Mix in the sifted ingredients until just blended. Add in your spices. Stir in the chocolate chips. I use an ice cream scoop to get even blobs of cookie dough onto the prepared baking trays. Do not flatten the dough. Leaving plenty of room so they can spread out.

  4. Bake for 15 to 20 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking trays for a few minutes before transferring to wire racks to cool completely.
